The Cosmopolitan, the Las Vegas strip’s newest hotel & casino, opens it’s doors tonight with great fanfare from all over the city. It’s received a lot of well deserved attention, but while most of the attention has focused on it’s luxury rooms and how it will justify it’s $3.9 billion price tag, I’m more interested in the new dining options it brings!
